The Food Offered to Tourists in the Mountain Districts of Norway. ;
A correspondent of the San Francisco
Chronicle, writing from Norway, gives the
following in reference to the food offered to
tourists in the mountain districts of the
country: ‘In general we have found it more
palatable than that of similar mns and small
hotels in Austria and Germany, or in our
own country. Et has been invariably neat and
cléan, and in good variety. The coffee is always excellent, though usually charged for
separately, even for breakfast; tea not so
good. Bread is well made, not too hard, as
be sour. What is called ‘tlat bread’ is somewhat like the Scotch oat-cal je as
thin as a wafer, and rather dried than
baked. Fish, as might be expected, very
abundant—served at every meal; delicious .
salmon, salmon-trout and various whiteusual meat is reindeer-venison. This might
be very good if roasted, but the cutlets
were not very palatable, and we never désire -to-see another. The deer are—kept, haittamed, in the mountains, and killed for food,
though im one place we had the meat from a
wild one shot by an English sportsman
rather too long ago. Their only idea of
dessert is some kind of omelet, eaten with
sugar and preserves—when it is regular
‘pancakes’ it 1s very good. The chief ‘com=pote’ is made of red whortleberries, so
called by the English, and not very nice.
“ But the chief peculiarities of the Norwegian breakfast and supper are their salt
relishes) and the prodigious amount of
cheese they consume. Tho relishes are
Traw—raw ham, sausage, pickled fish, etc.
but not very appetizing. The cheese is put
on in round loavés, some sweetened, of a
brown color like chocolate, some strong and
some stronger. The latter kind is, fortunately, handed round under a glass cover;
and Heaven forbid that your neighbor should
take any! Indeed, our chief object in selecting seats at table was to be as far away
from the cheese as possible. Apparently .
the natives know that their taste is peculiar, and good Dutch cheese is always added
to the list when travelers are present. Of
fruit we have had little, but the delicious
small strawberries are just ripening; said
tebe very abundant in Sweden. There are
peculiar Norwegian dishes of which we have
heard but which have not been offered us—
fish soups, fish-puddings and the like. Some
very nice croquettes of fish, in a white
sauce, were given us once; and one day we
asked for-their-barley-meal porridge, a-verycommon food among the peasants, but we
have not repeated the request. The bracing
air of the mountains, Lought to say, almost
always adds the sauce of hunger to whatever is brought forward.”

conference in Detroit was requested by the
waiter of a hotel to leave the table at which
he was seated and follow him into a side
room, where tables were set.
“You will eat here, if you please,” said
the waiter, seating the guest at a table.
“What is this room? asked the preacher,
“It is the ordinary; colored guests are al‘ways seated here.’’
“Then itis extra-ordinary,’’ was the witty answer of the guest of color,
