Pork PACKING.—Y¥ esterday morning
we visited the pork packing establighment of Cashin, Davis & Co, aboyt“a
miJeanda quarter from this y, on
this establishment may bé judged from
the results of last year Two thousand
hogs were butchefed, which averaged
gne hundred wéight of bacon cach,mak_
ing a totylof 200,000 pounds of bacon:

«curing season, which lasts about five
months, five men are empleyed in the
packing house, and under the systematic mamer of ‘working, this force is
large:enough to slaughterand take-care
-of forty hogs én one day. ‘To those who
have never wisited an establishment of
this ‘kind, a description will be jmter
esting. Opening from the large yard
‘in which the large droves of hogs are
kept, is the slaughter pen with open
brought to the hot water for scalding,
‘in order thet the hair may be easily
taken off. The water is all heated by
steam from.a boiler immediately rander
the vat. From the vat the hogs are
taken to a platform where they are
seraped, and then hung upona rack,
opened and thoroughly cleaned. A fter
<ooling, they are taken to the cutting
“table, where the hams, sheulders and
middlings are prepared for salting, and
the fat separated for rendering into

then salted in bulk, where it remains
until the salt penetrates and it is then
placed in vate of brine. From these
‘the meat is taken and is then ready for
the smoke

_., the good management of this part of
twenty thousand pounds can be cured
in the smoke house at once, and upon
the process depends in a great degree
the quality of the bacon. The manu‘facture of lard is also carried on in the
establishment. From the cutting table
the fat is taken to another, separated
and then reduced to small pieces and
prepared for the cauldron. The ‘rendering is done in a large boiler, solctahs
measures six or eight feet across and
three or four feet deep. After: bei
boiled the lard is taken from this Hee .
packed in cans for the market. It is of
snowy whiteness, and on account of its
excellent quality is in great demand in
the market. The bacon cured by Cash:
in Davis & Co., is of superior quality,
and finds a ready market at San Fran«isco, Marysville, or in. Nevada State.
Sometimes shipments are made, but as
@ general thing the entire stock ‘from
this establishment finds ready market
in Nevada county. The entire packing
house presents a neat and cleanly appearance, and every detail in the process of curing is attended to with the
greatest care.

give the boys a show at them ina shooting match, on Monday,November 25th.
The match will take place at Mulloy’s
old shooting ground, on the Red Dog
road. .,
. WorxkING SuLPHURETS.—Oscar Malt
man has recently greatly improved his
sulphuret works, which are situated
about a mile from this city, on the
Grass Valley road. He treats sulphurets by the chlorine process, and has
been exceedingly successful with all
classes of sulphurets. The capacity
of the works has heretofore been only
abouteight tons per week, but he is
now building a furnace which will easily reduce eighteen tons per week. He
has recently erected on the site of the
old works a building 90x36 feet. This
is the largest establishment of the kind
in the county. Imprévements will also
be made in the treatment of sulphurets.
Curistuas Party.—The German
Glee Club Harmonie will give a party
at Temperance Hall, on Christmas
night. The parties given by the Club
are always present and largely attended.
THe Young Men’s Social Club will
meet to-day at 120’clock for the elec~
tion of officers. This has been found
