M. vane COMGOPNING sun-dried-teas-the FACTS ABOUT THE TEA WE DRINK. But few people know that there {s such @ thing as sun-cured tea in existence, and fewer have seen ft. But there is, and it is of all teas the sweetest, purest, and most fragrant. You ask at once how it is that it is not offered for answered easily; but it is necessary to nt first @ few details. The public Gulp aoe two general classes, viz., the green and the black teas. Green Teas. . Few people know that the bright bluish green color of the ordinary teas exposed in the windows is not the natural color, Unpleasant as the fact may be, it ie nevertheless @rtificial; Prussian blue, silica, i Plumbago, and other unhealthful loan Colors being used forthis purpose Theeffect ig twofold. It not only makes the teaa bright, shiny, attractive green, but also permits the use of “ off-color” and worthless teas, which, @nce under the green cloak, are readily worked off as a good quality of tea. Theabomi{nable coloring practice even admits of the use of foreign substances, and the English government, which looks closer into the genUlneness of its staples that ours, has in some of the alleged “‘ finest" of teas found redried leaves, straw, fragments of matting, ricehusks, and willow leaves. In fact, it is openly tated by an English authority that hundreds of thousauds of pounds of sloe, ash, aud wis low leaves are annually, tmported as tea, which without the coloring process would be impossible, They report tea as one of the moat fotoriously adulterated articles of commerce, The temptation to make sweepings and bad’ tea intoa merchantable product with a few céuts’ worth of green coloring mater is too strong to withstand, and the worthlessness of the trash that often fiuds its way to this mar ket labeled “New Crop," “ Best Quality,” “Green Tes," étc., would simply astound the public if revealed, to say nothing of the unhealthfulness of the Prussian blue, plum. vago, gypsum, and the other mineral colors that are employed. Black Teas. The basket and pan-fired Japan teas, as well as the China teas that may be fucluded under the general beading of “ black teas," get their color from the firiig or toasting process, but mineral coloring matter is also frequently used to give a certaiu desired commercial Sppearance. The firing and the.coloring, as {a the greén teas, largely conceals the identity of the tea and permits the use of the very cheapest teas, to argue nothing for the deteriorating effect of excessive Griug.which must be resorted to when a very cheap prod: uct is used and an extreme color desired, Beoch’s Toa (Sun-dried), peopleof the Pacific Coast have heard but little and know less, although it is exteusively used where it {a-known-aud-understogd.,.We are told thas when tea fs so poor it cannot be sold at home or safely ahipped'to the English markets, it te shipped to America, that we will drink anything. That may possibly be one of the rea sons we have not been offered sun-dried teas, They were good enough to send elsewhere, The sun-dried teas being sun-cured, no coloring matter is used, hence nothing bet pure tea leaves can be employed; for unas sisted by Manipulation or coloring, all ab tom pts at adulteration of the introduction of foreign leaves or material would be bold and Glaring. That it is, therefore, sweeter and far more fragrant than the artificially colored Green teas and the manipulated basket or pan-fred teas, you hardly need be told, That it is more healthful than the miveral-coloied teas, ts also apparent. That it is more expenaive, is also true; and that is another reason you have never seen it, There is nt so much profit im it as there is in the cheap adulterated and colored teas, About the Cost of Teas. According to the custom-house reports, the amount of tea received at San Francisco last year (1800) was 6,840,187 pounds, aud the value 9056,290, or a fraction over 180 per pound, The consumer, of which the reader was one, paid for that. 138c tea all the way from 50c to $1 per pound. In other words, for that $66,250 worth of tea the consumer paid between four; and five millions of dollars, There are your enormous profits, and there you will probably find the chief reason why most of you never heard of arun-dried tea Astho sun-dried teas have no mask, they are compelled to be absolutely pure and of better quality than the artificially colored and manipulated teas. Hence the margins on them are smaller, au many dealers don’t care about baudling them, and you know nothing about them. But it is the object of this article to tell you where you can get them; and what to ask for, and all about them. : « Beech’s Tea.” “ Beech’s Tea,” guaranteed to be thé pure sun-cured leaves, is now offered to the people of the Pacific Coast, It will be a revelation to you. It fw offered to the people at 60c per pound, the same prive that many artifiofally colored teas are sold for. But its guarteed purity makes {¢ more eco ical to use; for a less quantity, say about twenty grains, ‘is required per cup. As there are 7,680 grains to a pound, there will be seen to be between three aud four hundred cups to the pound, or at the rate of about one fifth of @ cent per cup. Ite economy is therefore manifest. Itis put up in one-pound packages only, in patent airtight and moisture-proof parchment, with the trade-mark that is found at the bottom of this article p!ainly printed on the package. It ts sold tn this form for two reasons; one is, that the original strength and aroma is preserved; and second, there can be no deception, which would be quite possible if it were sold in bulk, without the name and trade-mark attached.
