The public only knows two general classes, viz., the green and the black teas, Green Teas. Few people know that the bright bluish green color of the ordivary teas exposed in the windows is not the natural color, UnPleasant as the fact may be, it is nevertheless artificial; Prussian blue, silica, gypsum, Plumbago, and other uubealthful mineral colors being used for this purpose The effect is twofold. It not only makes the tewa bright, shiny, attractive green, but also permits.the use of “ off-color” and worthless teas, which, Once under the_g:cen_cloak,-are— readily worked off as a good quality of tea. Theabom{unable coloring practice even admits of the_ use of foreign substances, and the English government, which looks closer into the genulueness of its staples than ours, has in some of the alleged “finest.” of teas found redried leaves, straw, fragments of matting, rice ‘busks, aud willow leaves, In fact, it is openly etated by ar®uglish authority that hundred of thousauds of pounds of sloe, ash, aud wiilow leaves are annually imported as tea, which without the coloring process would be impossible. They report tea as one of the most uotoriously adulterated articles of commerce, The temptation to make sweepings and bad tea intoa merchantable produet with a few cents’ worth-of green coloring maiter is too strong to withstaud, and the worthiessness of the trash that often finds its way to this mar ket labeled “New Crop,” “Best Quality," “Green Tea," etc., would siniply astound the public if revealed, to say nothing of the'unhealthfulness of the Prussian blue, plumbaxgo, gypsum, and the other mineral colors that are employed. ‘ Black Teas. The basket and pan-fired Japan teas, as well » as the China teas that may be included under the generat heading of “ black teas,” get their color from the firiug or toasting process, but mineral coloring matter is also frequently naed.to give.a certain desired commercial appearance. The firing and the coloring, as in the green teas, largely conceals the identity of the tea. and permits the use of the very cheapest teas, to argue nothing for the deteriorating effect of excessive firiugjwhich must be resorted to when a very cheap prodUct is used and an extreme color desired. Beéch’s Tea (Sun-dried), . Concerning sun-dried teas the peopleof the Pacific Coast have heard but little and know less, although it is exteusively used where it ia known and understood:—We are toldgithat when tea {s so poor it cannot be sold at home or safely shipped tothe English markets, it ie shipped to America, that we will drink anything. That may possibly be one of the ree sons we have not been offered suu-dried teas, They were good enough to send elnewhera. The sun-dried teas being sun-cured, so coloring matter ts used, hence nothing bee pure tea leaves can be employed; for unas sisted by manipulation or coloring, all at tem pts at adulteration or the iutroduction of foreign leaves or material would be bold and Giaring. That it is, therefore, sweeter and. far more fragraut than the artificially colored green teas and the manipulated basket or pan-fired teas, you hardly veéd be told. That it is more healthful than the miueral-colo:ed teas, is also apparent,’ That it is more expensive, is also true; aud that fs another reason you have never seen it, There i» a: ¢ so much profit im it as there is in the cheap adulterated and colored teas. About the Cost of Teas. According to the custom-house reports, the amount of tea received at San Francisco last year (1890) was 6,840,187 pounds, and the value $956,200, or a fraction over i8c per pound The consumer, of which the reader was one, paid for that 180 tea all the way from 600 to $1 per pound. In other words, for that $y56,259 worth of tea thecousumer pald between four and five millions of dollars. There are your enormous profits, aud there you will pr bably find the chief reason why most of you never heard of arun-driedtea Asthe sun-dried teas have no mask, they are compelled to be absolutely pure and of better quality than the artificially colored aud manipulated teas, Hence the margins on them are smaller, and many dealers don't care about handling them, and you know nothing about them. But it is the object of this article to tell you where you can get them, and what to ask for, and all ‘about them. eye: “Beoooh'’s Tea.” “Beech's Tea,” guaranteed to be the pure sun-cured leaves, fs now/Offered to the people of the Pacific Coast, It will be a revelation to you, You doubtless never saw any natural leaf, Have your grocer break open & package. It will be found in color to be just between the artificially colored gréen and the biack teas, and the drawn tea presents a clear, brilliant canary. color, of delightful fragrance. It is offered to the people at 600 per pound, the same price that many artificlally colored teas are sold for. But ite guar“anteed purity makes it more economical to use; for a less quantity, say about twenty grains, ‘is required per cup, As there are 7,680 grains to a pound, there will be seen to be between three aud four hundred cups to the pound, or at the rate of about one fifth of @ cent per cup. Its economy is therefore manifest, Itis put up in one-pound packages only, im patent air-tight’ and molsture-proof parchment, with the trade-mark that is found at the bottom of this article plainly printed on the package.
