AMMONIA IN BAKING POWDER.

To the Editor of The Tribune:—I have
just seen the report in your issue of Sept.
3, of the discussion at the Washington
ineeting of the American Chemical Society, Aug. 18, relative to the use of car
bonate of ammonia in baking powders.
This report is incumplete and incorrect
in many particulars, and as the paper
which precipitated the discussion was
read by me and was based upon my own
experiments, I desire’ to make certain
corrections in the interest of the truth
and for the benefit of the large nuniber of
your readers to whom the question is one
of great moment.
The paper as read before the society related that ammonia in baking powder is
retained in the bread by reason of its
affinity tothe gluten. The concensus of
opinion as expressed during the discussion was against the use of carbonate of
ainmonia in baking powder with the only
exception of Dr. McMurtrie, who.is now
anemploye of a baking powder which
uses carbonate of ammonia in its baking
powders.
Of the other parties mentioned or having taken part. in the discussion were

NORTH YUBA RIVER.
Rock Creek Gravel Mining Company’s
claim is located on the right bank of
Rock Creek about one-half mile below
Scales, and has two monitors with a
capacity of about 400 inches each under
vertical pressure of about 150 feet. .The
bank in this claim is about eighty feet
perpendicular.
At Oregon Hill, on the right bank of
Oregon Creek (No. 2), a tributary of the
North Yuba River, is located one small
moriifer, with a capacity of seventy-five
or 100 inches under a vertical pressure of
about 50 feet. The claim is very shallow (surface diggings), ranging from two
to twellve feet.

is a trifle over), we have 10,000,000 a
section, or 250,000,000 on the twentytive sections, saying nothing of the material remaining in the mountain gorges.
Add to this“estimate an equal amount
of land and fill on the Bear River, viz.,
250,000,000, and as much more for the
deposit on all the lands of the Feather,
American, Calaveras, Consumnes aad
other rivers (which must be widely
within the facts), 250,000,000 more.
These: estimates give a total of one
thousand aud eighteen millon cubic
yards: of mining deliis lying in the
navigable waters and upon the farms of
the Sacramento Valley.
