Partial Returns From Many of Our Productive Districts, The mining industry throughout Nevada county is full of promise for the future. Never at any~former period has so much capital been invested” inthe business, and never have so large a per centage of the claims been yielding -Pballion. There is no excitement, no indation of values on account of this gratifying condition offafiairs, Kverything is being done on f legitimate, and therefore wholesome, is, the same as shrewd and experiegced men in mervantile or manufactur ng pursuits would yo to-work to—expeild—their—labor-and a} capital in a way likely to’ yield a reagon{ a nacity and faith they have manifested in keeping the prospecting work going ahead. AMMONIA DOES NOT LEAVE THE BREAD. This is Proven by Actua? Testa in Baking. No Sophistry Required. ‘The fact. that _scientific_and_medical ‘men, and state legislatures have not hesitated to talk about the subject has_ challenged the attention of the public to. the discussion about the effect of ammonia and alum in food products, Aside from the claims of rival -companies which have to deal with this question, there remain a few truths on which people can build their own conclusions. One of the claims made is that ammonia when used in baking powder put.into bread, disappears in the baking of bread. Te be scientitic, the claim is made that ammonia-is-a-volatile salt. Medical men} of repute, ehemists of unquestionable standing, and practical business men who have given the iiatter.unbiased investigation, say such is not the case. The opinions ef these gentlemen have been printed.Thequestion was of sufficient importance to warrant somea-of-the legislatures of the country totake it up and pass upon it, Before action was takenon. ‘*wild cat” of the feverish and detoralizing days of-old doesnot find this:a congenial clime to purr in, and has probably left us never to return, The reports of progress which are published in the TRANsvkIPY from. time to ‘. . time are well ‘worth careful reading. (hey are plain, wnvarnished accounts, devoid of the exaggeration and glamor:so common to mining articles, and which invariably do more harm than good. Herewith are some notes relative: to the doings at a few of* the claims in different parts of the county: YOU BEY. DISTRICT. J. 8. Goodwin has ten men employed driving a tunnel from the bottom of his incline shaft, wiich is down two hundred feet; Tie tunnel has now advanced four hundred feet, and within from ten to fifty feet more-will réachthe blue lead that extends across the country from Dutch Flat to Blue Tent and North Bloomtield. Judge Giles S. Brown and J. Dealey are working the old Brown Brothers claim adjoining Goodwin's on the south. Chey have’ a number of men employed taking out large quantities of gravel, and are making money fast, In. the sixtie. b tween six and seven hundred thousand dollars’ worth of gold was taken from a small piece of ground in that vicinity. li is one of the: richest sections in the county, James McManus has been prospecting for quartz during the past four or five years at a point on Bear River about two miles from the town of You Bet. He pegs away all alone’sinking shafts and driving’ tunnels, andexpects t¢ eventually find a bonanza, He’ has obtained good prospects in several spots. County Supervisor Buffington of this city and Warren H. Pierce have béen prospecting ‘for some time at’ You Bet station en the line of the N. C. N. G. f. R., and as that vicinity is literally seamed with a-series ef ledges that give every indication en the surface of carrying gold, it is fair te presume that these gentlemen, both of whom are experienced miners, will in time have a big and Valuable mine there. * . GRASS VALLEY DISTRICT, The shaft of the Centennial. quartz mine has been thoroughly repaired, and things are.in. good shape for the resumption of operations, whieh will commence in the spring. The Pennsylvania 5-stamp mill has been started up ona large quantity ot first-class ore, says the Tidings. Tlie prospects underground are very . encouraging, the ledge being of good size and the ore of undoubtedly profitable grade. The Union says that the shaft of the California mime -is now down sixty-tive feet below the 200 level, and the work is being pushed as fast as, possible in order to oper # new level. ‘The drift south on the 200 level is being extended, and the vein, although only a foot in width, is of excellent quality and gives good returns in the mill. The mine has never looked as well as now. With the opering ef a néw level there will be 150 feet of backs, which will furnish ore for the mill for a long time to come, HUNT’S HILL DISTRIC?, The Chinamen who bought the old Harney and Goodspeed ground at Hunt's Hill have a big foree of Mongolian drifters at work and are taking out lots of Money. A fine body of ore has been found recently, and the owners are in @ fair way to soon reap abundant reward for the thousands of dollars they have spent and the perti> & by a Chinese company that is putting in the matter the committees in charge called chemists before them and tests were made, «In the state of Minnesota, for example, there appeared before the senate committee in charge of the investigation Charles W. Drew, Pli. B. M. D., analysical and consulting chemist of Minnea-potis; Dr. W. S. Ebermann,. chemist of he State Dairy and Food Commission of itate of Minnesota, and Prof. James A.\ Jodge, -Professor of chemistry at the University of Minnesota. As the question was, ‘‘Is ammonia a: volatile salt?” it was necessary to use in the test such baking powders as are acknowledged to sontain ammonia. The list included Andrew’s Pearl Baking Powder, Wood's Acme Baking Powder and Royal Baking Powder, Dr. Drew found in each a cream f tartar powder containing ammonia. Ye also found in the Forest City Baking } Powder, ar atum power, containing am‘nonia-alum, and in White Rose Baking Powder, an alumphosphate containing immonia-alum. He stated to the comvittee the. following emphat:e opini *T would not recommend the use of sufth powders to my patients, nor would I use them in my own family.’ This opinion réferred to the powders vhich had been used in making tests. The »pinion of Dr.-Ebermann, who had made v personal test, in addition, was to the ame effect. He went further and said hat in the samples of bread made/ irom he Royal and Rising Sun, ammonia could even be-detected in the sample of bread broken when hot, by the smell unmistakable evidence of the presence of vmmonia. Prof. Dodge made six tests, ind found that the Rising Sun, the Royal, Wood’s Acme, and Andrews Pearl baking powders contained ammonia, and that the Forest City and the White Rose contained ammonia-alum, and found vmmonia in, each of the six samples of bread make from the powders namid. The tests were sufficient to warrant the committee, composed of business and intelligent men, to recommend the passage of a bill which would require the manufacturers of such baking powders as contain alum and ammonia to have the fact printed on the package offered te the public, so that the consumers could 1ot be deceived. A, very significant hint that ammonia and alum are not, when caken into the stomach, conducive to health. The legislature of New York followed “She lead on such an enactment, andthe Illinois legislature discussed the question ‘efore their adjournment in the spring of 9k, The question is now before the legislature of Georgia. In Minnesota, when the question was first stated the leading inerchants of the two cities, St. Paul and Minneapolis, who deal in:food products, uldressed a communication to the legislature asking it to pass the bill compelling inanufacturers who make goods containing food adulterants to label cans coritaining the same. { The petitioners echoed the sentiment of the public in the use of the following words: ‘‘As general dealers in food produets and being necessarily without the skilled information te know of the composition. of special’ articles like baking powders, and at ail times being desirous of selling pure articles of food, we believe the information snch as is suggested by the proposed bill, i, ¢., that the cans be plainly laveled as to the nature of their vontents, is most righteous and just; the consumer can thereby purchase intelligently,” This petition was signed by the following representative houses, which are as high in their commercial integrity as the representative houses of any city in the country: Yerxa Bros. & Co.
