Wines Should be Made Without Sugar.
Dr. Flagg, of Cincionati, well knowa for
his connection with Nichulas Longworth in
the extensive production of native wines,
sontributes for the Country Gentlemen, the
following protest against recipes for sugared wines :—It is not by mashing up sour,
wild, uoripe grapes with water, sugar. aud
whisky, that ourfarmere are to become wine
growers, however well the mixture may
please the palates of unsophisticated women
aod children, and bard working mea, whose
olfactories never knew any other wine than
Madeira of American manufacture, Tell
them that good wine is never made of sugar
in any part of the world, aod that to
weaken with water, or strengthen with spirite is downright wickedness! The grapes
must be fully ripe, dropping off ripe, and
to reader them so the vines must grow on
stakes or very. low trellis work, The expressed juice must then be put into clean
“wine green’ casks, and cared for very
miuch in the same way a8 good cider is
managed, This done faitbfally, and the
prodact will be wine that will not ferment
over again in the stomach, deranging the
liver and muddling the brains.
"All tricks of adulteration and debasement.our people will take to naturally
enough by mere virtue of their nationality,
and without being told, Atter they shall
have learned how to make good, pure wine,
then they may, for home use, make a cheap
beverage in the following way, Into a
large cask fling the cheese from the winepress, after all the juice is extracted, or else
well mashed wild grapes of good flavor till
the cask is half-or two-thirds full ; then fill
up with water and add one pound of sugar
to the gallon of water; let the fermentation begin and complete its work in the
cask, and then draw off the clear wine and
put away io as cold a collar as you have,
and keep it well filled and closed up. Drink
it within a year.

lief; for conscience is a very artificial
thing, and you may bring up very good boys
in the belief that they are bad. At length,
happily, they went to a great public school ;
and like rockets they went forthwith to the
top of their classes, and never lost their placea there, From school they went to the university, and there wou honors more eminent than hadever been won before. It
will not surprise people who know much of
homan nature to be told that through this
brilliant career of school and college work
the bome-belief ia their idleness and ved
ace remained unchanged, and hardly at
its end was! tbe toll-worn senior wrangler
regarded as other than au idle and useless
blockhead.. Now, the affectiony whiew
prompts the noder estimate may be quite
as real and deep as that which prompts the
over-estimate, but its manifestation is certainly theless amiable and pleasing. I

constrnetion of a side-walk on I’ine street,
The Trustees of the City of Nevada Ordain as follows: .
Section 1. It shall be the duty of the property
holders on the westerly side of Pine street, between
Commercial and Broad streets, on or before the 25th
. day of September, 1861, to construct a side-walk in . :

The Trustees of the City of Nevada do ordain as
follows :—
Section 1. The City Marshal shall receive as a full
compensation for his services, the sum of one huncred dollars a month to be paid out of the City Treasury. He shall also receive for his services as Collector, fifteen per centum on all monies collected on account of poll and road taxes, and five per centum on
the amount collected by him on account of other .
city revenues; which per centage he is authorized
to retain outof the amount collected.

State of California, to HAMLLLON NORMAN, greeting: You are hereby summoned toappear and answer
to the complaint of W. A. MONROK filed against you
within ten days from the service of this writ, ifserved
on you in this county within twenty daya, if served
on you in this district, and out of this county and
within forty days if served on you in the State and

at two percent per month from April 1, 1860, and
interest on $69°51-100:dollars at three per cent per

him from you upon two certain promissory notes.

Court of the 14th Judicial District of the State of
. California, in the matter of the petition of ROBERT
ADAIR, an insolvent debtor: Pursuant to an order
of Hon. Niles Searls, Judge of said District Court,
notice is hereby given to all the creditors of said insolvent, Robert Adair, to be and appear before the
Hon, Niles Searls aforesaid, in open Court, at the
Court rovm of said Court, ip the city and county ot
Nevada, onthe 9th day of November, 1861, at 10
o’clock a. M., of that day, then and there to show
cause, If any they can, why the prayer of said insolvent should not be granted, and an assignment of bis
estate be made, and he be discharged from his debts
and liabilities, in pursuance of the statute in sueb
case made and provided; and in the meantime all
proceedings against said insolvent be stayed.
