Che Bining and Scientific Press, 255. — Meee Fat and Flesh Come cer They come from tha earth and the ntinosphere, collected by vegetation. Grasa contains flesh ; so grain. ‘The animal system puts it on from these. Veyetation thenis the urcdium throagh which the attinttal world exists; it can exist iu no other way. When grass or grain is eaten, the flesh constitacuts are retainad in the systom ; so ulso the fatty substance, that is, the starch and sugar, from which fut is mnde. Some grains have more flesh than others; so of the qualities that make fat. In a hundred parts of wheat, according to Piesse, are ten pounds of flesh; in a hundred pnrts of oatmeal, nearly doubla that amwonut. ITcnce oats are better tor horses, on uceoant of their fleshformiay principle, rather thau fat, as mascle is what a horse wants. For Inttening purposes, however, corit nud other grains are better. When flesh itself is eaten, the systein but appropriates what is alreaily formed, but would as readily take it from vexctables, from floar. The flesh-inaking principle—or the flesh ttself, in tts constitaents—goes to fori cheese in the duiry; the starch, &e., batter. tence i; is that some peopla assert that cream has little influence in cheese, further thnn to enrich it; for cheese and butter nre entirely distinct. The same kind of food is equally good for the production of either. -Tltis is a point of considerable interest, and is not yet fully expluined —intleed, it ts yet in its infancy.
