The Pavilion is a great catholie church, where we are all devotees, on & common footing, at that shrine of necessity which is called Industry, and weareall dutiful subjects to social law, wherein the ladies are the law-givers though in aroundabout way. There no aristocracy is to be seen, no privileged class taking rank above another, nobody so great a fool as to permit others to suspect that he feels himself in any manner above the grand level of the educated mass. There is not a coxcomb, nor a flirt, nor an empty-headed rich man or his wife, nor a fledgeling collegian with his head full of impractical theorems and vanities, iu San Francisco, or on the coast, but recognizes, the moment he passes the door-keeper, the existence of this spirit of democracy, or he suffers sad damage in a thousand criticaleyes. No worthless Prince comes here to be toadied; no lordling, who has attained power and the outward manner which soon follows consciousness of its possession, by unjust favor of law—instead of by proud, democratic, manly endeavor — expecting, though unobtrusively, if he be a gentleman, that others shall step aside for him. No ‘F, N.’s,” nor owners of Spanish leagues, can be distinguished here from an exhibitor of a hydraulic nozzle. In short, while there is not wanting a great deal of superior mental and physical material, there could not be found in all the world a better representation of an intelligent republican community than that which we witness in the nightly frequenters of the Institute Pavilion. The social lines are not yet drawn with distinctness in California, and social law, if measurably defined, perhaps has inefficient executors. But social law, with its attending ostracism, is an inherent necessity, and some kind of separation into classes is inevitable in the nature of man, as is sufficiently evidenced in history. The elements of social rank and of California society of the future, are all exhibited openly and unrestrainedly at the Fair, and that is the reason why you, reader— though you were not aware of if—have been coming here night after night and oking at the people, iustead of looking at inanimate things and machines. ALcoHoL FROM Woop.—In the process of making paper from wood, round disks of wood are first subjected to the action of hydrochloric ncid to dissolve out the spongy cellulose. This latter has,” until lately, been a waste product, but is now converted into aleohol in this way. The wood is boiled for twelve hours in hydrochloric acid, diluted with ten times its volume of water. The acid liquid, which is charged with grape sugar formed from the spongy cellulose, is tllen withdrawn, the excess of . acid saturated with lime or chalk, ond a small quantity of yeast is added, the temperature being kept at about 68° Fah. Fermentation soon ensues, and when bubbles of carbonic acid gas are no longer evolved, the liquid is distilled to obtam the alcohol.
