July 5, 1879.] MINING AND SC IENTIFIC GeRESS. 13 Butts’ Fruit, Vegetable and Hop Drier. The enormous and centinually inereasing demand fer canned and dried California fruits, and tho productien of availahle quantities, lias aroused the inventive facnlties in the direction of economical and perfect processes for supplying the market, Mr. Wm. Butts, scutheast corner Spear and Mission streets, S, F., is the patentee cf a fruit, vegetable and hop drier, which scems werthy the attention ef manufactnrers and farmers. The Butts drier is builtin sections, each of which is complete iu itself and of a capacity of 1,500 to 2,000 pounds per day, all the sections are precisely the same cut of lumber, and to any person desiring a large drier, several scctious are placed together. Put together with screws, the apparatus is se arranged as to be casily taken apart and transported to any distance in a portable shape. The fruit is-placed in the dricr upon a series of trays, and the drying heat conveyed to the whole interior cr to any particular tray by simple valves or dampers regulated at pleasure from the outside by nieansof a uuiform key. By means of these valves, easily regulated, the fruit, when ready for packing, necd not he removed from the drier, but may remain for any length of time, without deterioration, until necessary te be removed to give room for a fresh supply, the drying heat being shut off, This feature, it is claimed, is different from other driers, and the i inconveniences of ever-drying, ete., entirely avoided; saving the labor of handling mevable trays and. econoroy in the fruit by securing uniformity “of appearance and quality, The fruit dues uot require any manipulation by acids, ete., before, or any sorting after drying, it is put into the drier in its natural state, preserves its color without oxidatien, and cemes from the drier speedily, ready for immediate packing, shipment or storage. The apparatus is self-ventilating, and all the moist air arising from the fruit is carriel off immediately and perfectly. It is also claimed that 160° of heat in this process will aceomdish the same results as 300° in cthers, and with better results, brought about by 2 peculiar arrangement of side drafts all nnder control from the eutside, In the drying of heps this process is peculiarly valnable, as it has practically succeeded in the difficult task of drying heps without destreying their qualities by over-drying er inducing incipient fermentatien by imperfect drying. The hop drier now being successfully used by Orrin Howell at Hopland, Mendocino county, is said to bea visible preof ef the claims of the iuventer. Another feature of Mr. Butts’ apparatus is a frnit '‘canner.” In the canner, the fruit is put into the cans raw and sealed, then placed iu trays, carrying say 150 pounds each, easily handled, and cooked. It would seem practicable for all of our fruit raiscra to utilize their surplus fruits either by drying er canning, thus making them more marketable and eommand a better price than in a crude atate. Several farmers could combine i in the matter, and as frnit drying and canning is no longer an experiment hut, when wisely managed, an actual Ereiabe investment, there could net be any anger ef failure to realize pecuniary benetits. Specimens of fruits, vegetables, meats, fish, etc., dried by this procesa can be seen by calling upon Mr. Butts, and their appearance and qnality would seem to justify his claims, Every new subscriber who does not receive the paper, and every eld subscriber net credited on the label, within two weeks after paying for . this paper, should write persenally to the publishers withont delay, te secure proper credit. This is necessary to pretect ourselves and subscribers against the acts and mistakes of ethers.
