To Sweerren Rancid BuTTeR.—An agriculturist nesr Brussels, having succeeded in removing the bad smell and disagreeable taste of some butter by: beating or mixing it with chloride.of lime, he was encouraged by the happy reeult to continue his experiments, by trying them upon butt 6 id as tu be past use; and he hae“restored to\butter the odor and taste of which was insup “ ble, all the sweetness of fresh butter. The operation is extremely simple, and easily practicable for all. It consists in beating the butter in a sufficient quantity of water, into which had been mixed 25 or 30 drops of chloride of lime to two pounds of butter. After having thus broughtall ite parts in conhour or two: afterwards withdrawn and washed anew in fresh water, The chloride of lime having nothing injurious in ‘it. Gan safely be increased : but after having verified the experiment, it wos found wnat 25 to 30 drops to 24 pounds of butter were sufficient.
