REDUCE SPOIMLAGE—Use of the
boiling water bath instead of the
open kettle method of home canning
is suggested by Miss Virginia Black,
Emergency Food Preservation Assistant. There is no danger of spoilage organisms being sealed into the
jar if the boiling water bath is used.
This method is recommended only
for fruit, tomatoes, rhubarb and vegetables in acid brine. A series of
demonstrations on this method of
canning are planned and will be
scheduled at various communities in
Placer and Nevada Counties during
the summer months.
Complete directions are contained in “Home Canning” a circular by
Hilda Faust of the Home Demonstration Office, Agricultural Extension
Service. It is available at the Agricultural Extension Service office in
