SOUPS AND OTHER DISHES A GOOD soup is always a welcome dish. The following are good and worth keeping in your card index or recipe book: Corn Bisque. Drain a can of corn and chop fine. Simmer for half an hour in one quart of salted water. Add a, teaspoonful of sugar, two tablespoonfuls of flour mixed with two tablespoonfuls of butter and pour over the soup. Stir until well blended, then add gradually one pint of milk. Just before serving add and pepper and pour slowly over two well beaten eggs. Mock Bisque. Scald four cupfuls of milk to which . three-fourths cupfuls of bread crumbs have been stirred, one-half an onion stuck with six cloves, a sprig of parsley and a bit of bay leaf. Take out the seasonings and rub through a sieve. Add two teaspoonfuls of sugar, two cupfuls of canned tomatoes and cook for-fifteen-minutes. Add one-third of a teaspoonful of soda and rub through the sieve. Reheat the milk, add the tomatoes stirring gently, then one-third of a cupful of butter, onehalf teaspoonful of salt and pepper to season. Serve with croutons. Here is something new: Honey Jelly. Take three-fourths of a cupful of water, two and one-half cupfuls of honey, stir and bring to a boil. At once add one-half cupful of pectin, stirring constantly; bring to a rolling boil and remove from the fire.
