IE PONENT ECE EO COOK’S CORNER REQUESTED RECIPE A reader asked for a "good potatoe cake recipe” the other day..Sso here's a very old, completely tested “family" recipe given to this column by a friend of the Nugget down in Modesto: Ingredients: 1 cup mashed potatoes 1/2 cup milk and 1/4 cup warm water 2 cups flour, sifted with 2 teaspoons ~ baking powder ) cup sugar . cup shortening 1/4 teaspoon salt 4 eggs, beat yolks and whites eoG@R@Ak LA fe separately 1 cup chopped walnuts or pecans 1 teaspoon nutmeg 1/4 teaspoon cloves Preparation: Cream sugar and shortening, add beaten egg yolks, milk, water, flour and baking powder, mashed potatoes, chocolate, nuts and spices, Mix well and lastly fold in stiffly beaten egg whites and mix thoroughly. Pour mixture into large loaf pan which has been well greased. Smooth batter evenly. Bake in a 350 degree oven until done-a little over an hour does it. This cake keeps well. * e Bee ROT SPICED TEA: Pour 2 quarts of boiling water over 12 teahags, 1/2 teaspoon of whole cloves and 1/2 slick cinnamon. Remove teabags and stir after steeming for five minutes. Then add 1/2 cup sugar and 1/2 cup orange juice. Allow mixture to "simmer" on stove for five minutes and just before serving, ad@ 1 cup of sherry wine and mix well, Yield: 10 cups, North San Juan News by Idabel Covert Now that all the public Christmas celebrations are over, the residents of the Ridge can tum their attention to getting ready for Santa's visit at home. Yes, Santa Claus will arrive in Rough and Ready Frida night at age fire truck. Santa will distribute goodies to the children and shivering parents will be served hot coffee or chocolate by the Chamber at cecal Service across from the Community Tree. Everyone is welcome even if not accompanied by children. ” The Rough and Ready 4H will conduct a cake auction presided over by Mr. Step and a Half. The auctioneer, in case you couldn't translate the step and a half bit, will be supervisor of our district, Mr. Larry Filer complete with his crutches. Last Friday night saw the lighting of the Community Tree. If you have an ornament you would like to add to its decorations you may place it on the tree first time you go to the P.O, for your mail. Brownie suggests this can become quite a tradition as well as being a good method of making the Tree real Christmasey for day time observers, Certainly it won't be commercial. Have you noticed the Candy Canes and Evergreens which the Chamber Decorating Committee placed last Monday. Mrs. Lisetta Scheave Chairman of the Committee has a dream. Someday she would like to see everyone in town literally line the street with lots of Candy Canes. In between, and everywhere in fact, she wants to see living Evergreen firs, Pines, Cedars, etc. would be beautiful and it would attract lots of visitors. We have several common Pines on our hill which have grown at the rate of about a foot a year. They were started as seedlings 2 years after we came here in 1956. I think they are beautiful. The only care they need is a little water in the hot weather for the first year. E you are planting on a hillside they do best if the hill is facing North or East. Seems the afternoon sun, on a hill facing it, gets hotter at this elevation than they really like. The Chamber Board meeting appointed Conne Baer, Fay Dunbar, Harold Brown and John Schuster to judge the Outdoor Christmas Lighting effects this year. We will try to see them all but if you want to be sute we don't miss you it would be nice if you would let one of us know you have an entry to judge. We will be judging Thursday evening December 21. So be ready. It's a fun and beautiful trip. ! have done it every Christmas since 1967. Not always as Judge. Mostly I just Chauffer. Prizes are living Evergreen trees. eee EEK 'Nevada County seems to have had its White Christmas already. Hope you didn't have broken pipes or pumps. Our barn was without water for a week. The ditch froze over and stopped the water in the line which promptly froze and didn't thaw until the rains came. Fortunately no broken Pipes so far. Seems we've had this kind of cold twice before, 1932 and 1937, We're going to do some pipe inspecting and wrapping come summer just in case. eee *¢ + I think the American Christmas celebration is wonderful. Just a bit too commercial, maybe. The other day [heard a parent say, as he patted his first born's cheek, that he wasn't going to let his children believe in Santa Claus. He admitted he wanted his kids to know it was him who gave them their gifts. With communication what it is today kids can't believe very long. Every child is entitled to have as many Christmases as possible with the tinsel and holly as well as the infant Jesus mixed in with the pure commercialism. I believed in Santa Claus until I was 12 years old. Actually I just kidded myself and my parents the last year. I loved it that much. We lived on a farm miles from anywhere except other neighbors like ourselves N who just wanted the wonderful Season to be happy. = e** For several years I have included in my Christmas columns something about the origin of Christmas. There is little doubt that much of our celebration came from the pre--christian era and these customs are most interesting. One of the nicest things I have found this year is the Legend of the Holly. R's in poem form with no author claimed. I should like to quote a few brief lines because I think they are so beautiful. They provide such a nice link between the pre-Christian, Christian, early English Christmas and ours which really began with Clement Moore and Twas the Nicht before Christmas. Quote: “There wasn't any time at all to find a hiding place, For herod’s men approached them as a swift and steady pace, Se Mary took her little one and with a whispered prayer, Hid him beneath a holly bush with gentle, loving care. The wintered holly put forth leaves to hide the infant King, And grew a cuard of slender thorns about him in a ring. The Christ child blessed the Holly then so that it would always be Forever green — A sien of hope and immortality. And of all the other plants that crow the Holly's set apart, Because one night it held the Christ Child in its heart," The red berries of the Holly developed from the drops of Jesus blood that appeared when he was given bis “crown of thorns” to wear af the Crusifiction. Truly the Holly has become a Christian symbol and deserves its place in our celebration of the Saviors birth, Seeszeeezn ea Mrs. Joba (Wim) Schuster is having a most interesting party at their home on Rough and Reacy Road today. B's called a Cookie Exchange Party, Friends come each bringing a tray of their favorite Christmas Cookie Recipe. At the close of the party the ladies exchange not only recipes but each goes around 2 beautifully spread table and selects several of each cookie variety. That makes a luscious array of Christmas Cookies available at home with just a few bakings inSead of literally dozens, The ladies of this area are exceptionally good cooks so I know there will be a beautiful selection of cookies.
