The Fantastic
Land Of Fungi

AGARICUS SUBRUTILESCENS (edible).
This year for the first time, this species was brought
to my attention and I have found them on a number of
occasions myself. Withthe help of Dr. Isabelle Tavares,
Senior Herbarium Botanist, University of Calif, at Berkeley, they were determined as the subrutilescens species
of Agarics. They resemble somewhat the common. field
mushroom (agaricus campestris), but are larger and
more colorful.
When very young and in the button stage, the caps are
a deep purple -brown and fibrillose to the. extent of giving
a furry look. When expanded, the fibrils break up,
forming a dark spot in the middle of a light-colored cap,”
leaving scattered patches over the rest of the cap. The
stem is white with zones or scales, the flesh is white but
the gills are pale buff when young, turning to a dark
vinaceous brown at maturity. It grows under conifers
mostly but hasbeen found growing in hard roadside dirt.
Having eaten these, I will in the future watch the
same areas where previously found, asI consider them
one of the best.
