OO 4 The Nevada County Nugget Wednesday, June 14, 1972 The Cook's Corner SALAD DAYS Now is the time for all good cooks to trot out their best summer salad recipes and try to beat the heat at dinner time... Why not try "Chicken Cranberry" ... soften one envelope unflavored gelatin, in 1/4 cup cold water, dissolve it over hot water. Then add dne 1-lb, can cranberry sauce (whole berry type), one 9-oz, crushed pineapple, 1/2 cup chopped walnuts and one tdblespoon lemon juice, Chill until firm in a 10" x 2" baking dish. Then take a second evelope of gelatin and treat as above, blend in-.one cup mayonnaise or salad dressing, three tablespoons lemon juice, 3/4 teaspoon salt, 2 1/2 cups diced chicken, half cup of chopped celery and two tablespoons chopped parsley ' (fresh) and add half a cup of water, mix well and pour over chilled cranberry layer, Chill until firm, cut into six squares and serve on lettuce with a mayonnaise topping sprinkled with additional nutmeats if desired. * * * For seafood lovers here's a delicious version of combination shrimp and crab salad: Combine tne following in a large bowl, mixing lightly but thoroughly ... two 5-oz, cans drained shrimp; two 7-oz. cans crab, drained and flaked, one can water chestnuts drained and sliced, one 1-lb, can green peas drained, one small jar pimiento drained and chopped and one cup of diced celery. (Optional addition 1/4 cup chopped green onions), Dress with the following: Blend 1 tablespoon flour, 1 tablespoon sugar, 1 teaspoon salt, 1/8 teaspoon pepper, 1/2 teaspoon tarragon, 2 tablespoons salad oil, 2 eggs beaten, 1/3 cup lemon juice and 1 1/3 cup evaporated milk. Cook, stirring steadily, over low heat until thickened. Remove from fire and beat until smooth. Chill. Yield: 10 servings. As vacationers head over Interstate 80 towards Lake Tahoe and the Sierra Nevada, they pass through the foothill country. And when they reach that point where the valley oak and sycamores begin to give way to the stands of pine and fir, they are in the heart of California's fabulous gold country. Nearby are the homes of Lotta Crabtree and Lola Montez, both in the same block on Mill street near the center of town. Lola Montez came from Bavaria in 1853. She was a singer and dancer who had been a favorite of the king. She spent twoyears in Grass Valley during which time she encouraged a young neighbor, Lotta Crabtree, in the arts of singing and dancing, ‘ Lotta went on to become famous and rich and beloved throughout America. The Montez home is open to the public for tours during the summer. A short distance away from the town's center is the Empire Mine, located in a most unusual setting amidst a park-like pine forest. It was the largest mine in Grass Valley and one of the greatest hard-rock mines in California, Many ofthe buildings used during its long period of operation are still standing, The Empire had 200 miles of underground workings and one recordbreaking vein was followed for 9,000 feet before it gave out. There are other mines, too, that you can visit and poke around among the old mining equipment without danger---the IdahoMaryland, the North Star, the Pennsylvania. And the fun of Grass Valley is walking down its quaint convered sidewalks along the narrow streets, enjoying the leisurely pace of this old Queen of Northern Mines region.
