BARBECUE BESTS
One of the easiest meats to barbecue isthe short rib of beef.
It can be cut and trimmed into easy-to-handle pieces...stores
easily, and certainly is one of the tastiest cuts of beef on the
market...usually at very moderate price.
Ingredients: For six generous servings, 4 1/2lbs short ribs
1 cup "hot" catsup ‘
1 cup hot water
1/4 cup wine (red pref.)
11/2 tbsp sugar
1 Tbsp horseradish
1 Tbsp dry mustard
1 tsp salt
1/2 tsp black pepper
1 tsp red Chili pepper
3 onions chopped fine
3 Tbsp chopped parsley
Preparation: Wipe meat with damp cloth, place in deep
-bowl, combine remaining ingredients, pour over short ribs and
let stand in refrigerator overnight, turning meat in sauce several
times before using. Bake in 300 degree oven...in a covered
Dutch oven...for about 3 hours or until tender to your taste.
Skim excess grease off sauce and spoon remainder over the
ribs just before serving.

With the arrival of the long
hot days there are more and
more trips made to the various
swimming holes wherever they
may be, I think the garden hoses
have been getting their share
of a workout too for the little
tykes. Wonder of wonders, my
first attempt at growing a garden is a success, the plants
are at least coming through the
ground.

The Sunday School picnic
By
Winifred Tyrrell Rhodes
June and the Sunday School
Picnic! Of course there was
the Miner*’s Picnic too, but the
crowd was boisterous and it
was an entirely different kind
of affair. The Sunday School
Picnic belonged to the kids and
what a memorable day it was,
The free tickets were given
out two weeks before at the
church of your choice. It was
the one Sunday when practically
every youngster in town went
to Sunday School.
Our mothers made preparations days in advance for the
lunches which were packed in
baskets to be carried to the spece
ial train that took us all
to Chicago Park,
Walking up the steps to the
old Narrow Gauge Station, we
were full of excitement and anticipation. Here was our train
--open freight cars with boards
across from side to side tn make
the seats, There were uprights
along the side to which a canvas canopy was attached which
billowed in the breeze, As I
look back, I remember it as
one of the most beautiful sights
I’d ever seen,
Scaredy-cat that I was, Ichose
one of the center seats, but the
boys wanted to be on the outside,
As we pulled away from the
station, all of us were ecstatic.
We could’ hardly contain
ourselves. The boys proceeded
to hang over the edges, their
mothers screaming above the

to fall under the wheels and get
cut in half?”
We all arrived safe and sound
at Chicago Park, Everybody
tumbled off to reach the best
picnic spot first. There were
no tables or benches--we just
put our blanket on the ground
and staked out our spot.
There were the races first
the fleet footed boys’ race and
finally down to the sack race,
Contests of all kinds and, as I
remember, nobody cared
whether he won or lost. It was
just a fun day.
Lunch was’ always _ fried
chicken, potato salad, stuffed
eggs, pickles, “‘sody’’ pop and
ice cream.
Then we walked down the tree
shaded path to Shebley’s Pond,
There was a spring half way
down and myriads of ferns covered the banks, interspersed
with wild flowers.
At the pond, swans idly swam
among the water lilies and boats
were for hire. The Shebley house
overlooked the pond--a place that
now would be the dream farm
house for anyone desiring a home
in the country.
After a ride in the rowboat,
we pushed our way thru the cat
nine tails to shore. Trudging
slowly up the hill to the park
area, we realized our happy day
was about to end. At the park,
all the ladies were gathering
up the tablecloths, closing up
the pickle jarsand putting everye
thing in the baskets,
Regretfully, we walked slowly
to the gate and boarded the train,
