Karen Beattie Announces Engagement
Mr. and Mrs. Kenneth D.
Beatie of Rough & Ready
recently announced the engagement of their daughter,
Karen, to Mr. Ted Olson of
Los Altos, Calif.
The announcement was
made to members of the
family at a buffet luncheon
.

present to hear the good news
were Karen's brothers, Gordon and Daniel, and grandfather Cary S. Arbogast of
Rough & Ready, Mr. and Mrs.

CORINTHIA
Do you know that 35,000,000 women in the United
States save trading stamps? My mother is one of them.
She has saved quite a few books of Green Stamps and
daddy says he guessed she was just about the top philatelist
in our town. I asked him what a philatelist was and he
said it was a person who collected valuable stamps.
Yesterday Mother got a catalog inthe mail that showed
all the wonderful things you can get by saving Green
Stamps. One of the things was a color T. V. You need
150 books of stamps to get it, though, and I don't know
ifeven Mothercansawe enough Green Stamps for a cober

Grandmother let me have lots of her stamps so I could
start saving them, too. I pasted them all in the empty
books she gave me and when I finished I had 1 1/2 books.
But you can't get many good prizes for 1 1/2 books.
When! went down to the center where you turn them in,
all I could get was a scratching post for a house cat.
It is a real nice one, though. It is covered with a kind
of carpet and has a little compartment for catnip.
I'wish you would let me know, Corinthia where I can
get a nice cat.
I really think trading stamps are very valuable. It
. pays tobe a philatelist.

of which she is now president,
on the University. of the
Pacific campus at Stockton.
Members of Phi Kappa Tau,
Ted's fraternity at Pacific,
alsoreceived the news at the
same time.
Karen, whohas studied at
the University of the Pacific
for the past three years will
receiveher B.A, degree this
summer and will continue her
studies as a graduate student
there next year, working for
her secondary credential and
her master’s degree in speech.
She was recently selected as
aKnolen, the senior women's
honorary society at the University. .
Ted, a graduate of the
University of the Pacific,
class of 1962, is presently
studying law at Bolt Hall
at the University of California in Berkeley.
No definite wedding plans
have been made.

NEW BEDFORD, Mass.--2The
town that once earned the .
distinction of being the
greatest whaling port in the
world can now boast thetitle,
"the sea. scallop port of the
world,”
To spread the news about:
scaiops and to encourage the
eating of scallops, every
summer for the past four
summers, N ew Bedford has
been the seene of a Scallop
Festival. Thousands of
pounds of sea scallops are
donated by the New Bedford
Scallop fleet so that 20,000
or more people can feast on
aNew England Scallop Dinner. This year the Festival is
scheduled for August 10, 11
and 12.
Home Economists and
other good cooks caution .
against ov er-cooking scallops. Scallops, like all fish
and shellfish, cook in a very
short time. Whether sauteing, broiling or frying, it
takes only 2 to 5 minutes to
bring the delicate scallop to
the perfect degree of doneness, Since scallops are delicate in color and taste, add
color by sprinkling them with
paprika,
“ Grilled Scallops
, . Allow 6 to 8 scallops per
iperson. If frozen, let defreeze and drain. Cut vegettables into thick pieces about
the same size asthe scallops,
using green peppers, onions,
mushrooms or tomatoes,
Steam green pepper pieces
and onions 3 to 4 minutes.
Drain and cool. Arrange the
scallops and vegetables on
skewers, having about 1/4inch space between each
piece of food. An outdoor scallop meal
may be informal, letting
each person thread their own
skewer and cook it. If using
an outdoor grill, set the grill
several inches from the heat,
usually as far as you can.
Scallops should be cooked at
low temperature for best results. Cook 4 to 6 minutes.
To prepare scallop grill
indoors; line ashallow
baking pan with foil. Arrange food on skewers; baste
with Scallop Sauce. Place it
preheated broiler, severa
inches from the heat source.
Baste and turn while cooking.
Cook 4 to 6 minutes or until
delicately brown.
Scallop Sauce
1/4 cup finely chopped celery
1/4 cup corn oil
1 clove garlic
3 tablespoons finely chopped onion
2 tablespoons prepared
mustard
2 tablespoons vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
Measure all ingredients
intoa jar. Cover and shake.
Set aside for fla ors to blend
or store in refrigerator. Remove garlic. Mix well and
use as basting sauce, using

Back From Cruise
USS TULARE---John E. Ford,
fireman, USN, son of Mrs.
Dorothy D. Ford of 410 Factory St., Nevada City, returnedto San Diego recently
after spending seven months
in the Far East aboard the attack cargo ship USS Tulare.
The Tulare was part of the
Seventh Fleet, a major element of American seapower
abroad.
During the cruise, the ship
visited Bangkod, Hong Kong,
fe maining sauce to serve
with grilled scallops. Makes
about 3/4 cup.
Scallops Au Gratin
1 pound sea scallops
1/4 cup.corn oil
1/2 pound mushrooms, sliced
1/4 cup bread crumbs
2 tablespoons corn oil
2 tablespoons corn starch
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon Worcestershire
sauce
1/4 teaspoon white pepper

ART IS FUN...Young students spread their art work on the
floor Sunday at the Artists' Workshop in Nevada City as Bob
Wolden instructed on potato prints and other such delightful
‘means of spreading color onto a paper (andclothes). Several .
classes were held to accomodate the large group of youngsters .
ART IS APPRECIATED..Several hundred area residents turned
out Sunday to make the first Sierra Workshop art show a success
in Grass Valley. More than 100 pieces by local artists were
on display. The group is planning an outdoor showing during
the Fourth of July celebration.

As the bill now reads, it
. would bring in some $70 million revenue annually to as
sist counties and cities to
bring their streets and roads
program up to date and prevent futher deficiencies.
Senator Collier, appearing
before Senator George. Miller's finance committee,
cited a “sore need” for
county road and city street
assistance. Deficiencies, he
said, will mount tosome $12
billion by 1980 unless the
measure is passed,
Collier said business and
labor groups, the State:Automobile Association, the
County Supervisors Associa ~_ tion of California, League of
California Cities, truckers,
railroads, teamsters and
many other groups favor the
bill. 2
"About 300 cities have
adopted favorable resolutions
throughout California,” Collier told the committee.
"This represents more than
10 million population.”
The bill w ould hike the
asoline tax from 6 to7
cents. Allof the new money
would goto cities and countieson a basis of auto registration. A new feature of the
bill would give $4, 800 to
each city and$9,600to each
county of money they would
not have to match. The remainder would be-matched
with state funds on a basis of
$2 state and$1 local money,
for the first four years. Gradually ‘that ratio would be
shifted until eventually it
will be on a dollar-for-dollar basis. The unmatched
money for counties and
cities, totaling some $2,
400,000, is for minimum
assistance programs.
The money isnot for highways or freeways, ithas been
stressed, andis more a local
levy than a state tax, since
the state would only act as a
collector and administrator
of the fund.

2 cups milk
1 tablespoon diced pimiento
1 tablespoon sherry, optional
1/4 cup grated cheese
Rinse scallops, removing
any pieces of shell. Cut into
cubes. Pour the 1/4 cup of
cor oil into a medium size
saucepan, add mushrooms
and satue slowly over low
heat until tender.’ Remove
mushrooms; set aside and put
bread crumbs into the corn
oil left in the pan; stir. In a
medium size saucepan,
blend together the 2 tablespoons corn oil, corn starch,
salt, dry mustard, Worcestershire sauce and white
pepper. Gradually stir in
milk. €ook over medium
heat, stirring constantly,
until mixture thickens and
comes to a boil. Add scallops, mushrooms, pimiento

mixture into lightly greased
baking dishes or scallop
shells. Sprinkle bread
crumbs around edges and top
with cheese. Bake 375°F.

lemon, Makes 4 to 6 servings.
Lemon French Dressing
1 cup corn oil
2/3 cup lemon juice
1/3 cup sugar
1 1/2 teaspons salt
2 teaspoons paprika
1 teaspoon finely grated
onion
Measure all ingredients
into a bottle or jar. Cover
tightly and shake well.
Chill. Shake thoroughly befor pouring over crisp Boston
lettuce or mixed greens.
Makes 12/3 cups. Serve with
Scallops Au Gratin or other
scallop dishes.
