matched with cakes made from
standard recipes. As for such
qualities as\color, texture, moisture, and flavor, the panel of
judges found little if any difference between what they considered the best “mix” cake and the
best “recipe” cake.
* What about the keeping qualities? The judges decided that in
this regard the recipe cakes rated
a little higher. Tests showed that
the mix cakes had a slightly stale
flavor after six weeks of freezer
storage—or 48 hours at room temperature. They dried out rather
quickly at room temperature.
Such changes did not. show up
So much in the recipe cakes test=
ed. But we usually bake our cakes
to eat—not to keep, And there

“That definition is peculiarly
applicable to those California
rivers which depend upon periodical supply of water from winter
rains and melted snow, and which
diminish in the summer time to
mere rivulets which aimlessly
wander about over dry gravel
beds.”
