TT'S PORK TIME AGAIN
Now that the days are a bit on the cool side .. and aren't
you glad of it .. we can begin to relish the thought of some
succulent ‘pork dishes. How about the following ideas for
starters: 5
GOLDEN HAM PIE: Saute three tablespoons minced
onion in 1/4 cup cooking oil for about three minutes, then add
1/4 cup minced green pepper and saute an additional four or
five minutes, remove from heat and blend in 6 tablespoons
flour, stir in 2 cups of milk and 1 can of cream of chicken
soup .. gradually. Bring to boil over low heat, stirring constantly for one minute. Remove from heat and stir in 2 1/2
cups diced, cooked ham and one tablespoon lemon juice.
Pour into a lightly greased & x 12-inch baking dish. Prepare
1 cup Bisquick according to directions on package and add to
it 3/4 cup of grated sharp chedder cheese. Place biscuits
on top of ham mixture and bake for approximately 20 minutes
in a 450-degree oven. Yield 6-8 servings.

PORK CHOPS IN A POT: Brown and season six thickcut pork chops. Mix one package of bread dressing according to package directions. Flace pork chops in large casserole dish and put the dressing on top of them in an even
layer. Mix one can of cream of mushroom soup with half a
can of water and pour over the dressing. Bake for about 45
minutes in a 350-degree oven. Yield: 6 servings.

PORK CANAPE CAPERS: Grind two cups of cubed pork
very fine (pre-cooked, of course) and mix in a bowl with 1/2
cup mayonnaise to which you have added 1 teaspoon Catsup and
a heaping tablespoon of sweet pickle relish. This is very tasty
served as a canape spread, and may be made thinner by the
addition of more mayonnaise if desired.

Dr. Robert L. Ross, Jr., who isa
Grass Valley optometrist. An inscribed gavel was presented to Dr. Ross commemorating his leadership during
his tenure as President.
