ABOUT THE TEA WE DRINK. the sweetest, purest, aud most fragrant ask at once how it is that it fs not o You fered for answered easily; but it is neces esnry to pre first a few details. The public only knows two general classes, viz., the green and the black teas. Green Teas. Few people Know that the bright bluishgreen color of the ordinary teas es pOsedin the windows {s not the natural eolor, UnPleasant’as the fact may be, It is neverthetess artificial; Prussian “blue, silica, Plumbago, and other uubealt! @olors being used fyr © fa twofold. Ft noto: ity shiny, attractive g:ccn, but also Lermits the use of “off-color” and worthless teas. whic h, once under the green cloak, are readily worked off as a good quality of tea. Thea’ om, fuable coloring }ractice even « 8 of -the use of foreign substances. and the English government, which looks closer into the gen uineness of Its staples than ou's, has in some of the alleged ‘fi vest’ of teas found redried leaves, straw, frazments of matting, rice husks, and willow leaves. In fact, itis openty stated by an Euglish authority that hundr of thousauds of powids of sloe, ash, low leaves are aunually: impor which without the coking process would be {my dssible. They report toa as one of the tiost notoriously adulterated articles of cominerce. The temptation to make sweepings and bad tea intoa merchantable product with a few cénts’ worth of green coloring ma ter is too strong to withstaid, and the Worthlessness of the trash that often finds its-w ay®o this nar. et labeled “New Crop," “Pest Quality,” “Green Tes," ete , would'simply astound’ the public if revealed, to say healibfulness of the gypsum, ful min bral eds acd wie tod -astea, nothhoy ef the un brus plus oaugo, gypsum, and the other mlueral colors that are employed Black Teas, : Tho basket and pau-flred Japan teas, as wall as the China teas that-may be included under the geveral-headiny of “ black teas,” get their color from the firt g or toasting process, but Mineral coloring matter is also frequently used to give a certair des; appearance. The fring and the coloring, as in the green teas, largely eonceais the {den tity of the tea and permits ie use of the Very cheapest tcoas, to arsue nothing forthe deteriorating effect of excessive firin g. which must be reserted-to wheu a very cheap prod: Wet-is used and au extreme color desired, __Beech's Tea (Sun-dried). Concerning sun-dried teas the peopleof the Pacific Coast have heara but iittle and know less, although it is exteusively used Where it fg known. aud understood “We are told that when tea is so poor it cannot be sold at home or safely shipped tothe-Euglish markets, it te shipped to America, that we will drink/anything. That may possibly be one of the ree sons we have not been-offered sun-dried teas Thoy Were good enough to send elxew here. The sun-dried teas being suo cured, no coloring matter is used, henge nothing bus Pure tea leaves can be employed. for unas @sted by manipulation or coloring, all at tem pte at adulteration or the iutroduction of foreign leaves or material would be bold and Glaring. Thatt+is, thereloie, sweeier aud far more fragraut than the artificially colored green teas aud the manipuiated basket or pan-fred teas, you hardly need be told. That it is more healthful than the mineral-colo ed teas, is also apparent, ‘That itis more expen sive, is also true: and that is another reason you have never seen it. Therei. mn. ts0 much profit in it as there is in the cheap adulierated and colored teas. About the Cost of Teas. According to the custom-houre reports, the amount of tea received at San Fraiicisco last year (1890) was 6,840,187 pounds, and the valine $956,290, or a fraction over iic per pound The consumer, of whigh the reader was one, paid for that Ie tea all the way from fle i $1 per pound. In other words, for tha’ §256,2 worth of tea theconsumer . aid bei ween four aud five millions of dollars. “There are your enormous profits, aud there you wili pr tably find the chief reason why most of you never heard of asun-dricdtea As the sun-dried tea have no mask, they are rompelled to be absu lutely pure and of better quality than the artificially colored and manipulated teas Hence the margins on thein are sinaller, aud many dealers don't care about huidiing thera, and you know nothing about them. But it ts the object of this article to tel! you where you can get them, and what to ask for, and all about them. au blue, red Commercial “* Beech's Tea."* " * Beech’s Tea," guaanteed to be the pure sun-cured leaves, fy now offered to the people of the Pacific Coast. Ht will be a revelation to you, You doubtiesa never saw any natural leaf. Have your grocer break open a package. It will be found in color to be just between the artificially colored green: and the black teas, and the drawn tea presents a clear, brilliant canary cotor, of delightful fragrance. It.is offered to the people at 60c per pound, the same price that many artifi cially colored teas are sold for. But its guaranteed purity makes it more ecouvmical to use; for a less quantity, say about twenty grains, ia required per cup. As there aro 7,680 grains to a pound, there will be seen to SE But few people know that thero issuéa a thing as sun-cured tea inexistence. and fewer . have seen ft.
