VENISON ROAST
The Czechs are very fond of wild game, and many of
. their cookbooks devote large sections to that type of cookery
— with some wonderful recipes for venison. The one that
follows is typical, and involves items easily procured in
our area. The seasonings and method of preparation may be
used for almost any of our wild game, especially venison,
or may also be adapted. to sauerbraten — if that is one of
your favorite foods.
2 cups white vinegar
2 cups water
1 tsp. salt
3 large onions sliced
6 cloves
14 whole peppercorns
8 allspice
2 large bay leaves
6 lb. venison roast, boneless
1/2 lb. bacon pieces
3 sliced carrots
3 stalks celery, chopped
1 bunch fresh parsley
1 cup sour cream
3 tblspns. sifted flour
4 large cloves garlic
minced fine
Boil first eight ingredients for five minutes and then
allow to cool. Pour over roast into which you have inserted
bacon pieces about a half inch below surface. Place in shallow
dish and marinate for one week in refrigerator — turning
three or four times.
Brown roast well on all sides, place vegetables (except
garlic) over meat, add a small amount of water and roast at
325 degrees about three hours, or until well done.
Remove from oven, pour off drippings and put thru a food
mill with vegetables — adding minced garlic at this point.
Add sour cream and thicken with flour, Pour gravy over
meat, return to oven until well heated again and then serve.
Yield is eight to ten generous servings.

Juan News
By Idabel Covert
One of the more impossible
things to have to do is to write
a news column when there is
no news. No news suitable for
this type of column, that is.
To be sure, people have visitors: and they, in turn, visit
others; and they take business
trips occasionally, too; but it
seems to me readers must get
pretty tired of that sort ofthing,
week after week.
The thought of a gossip
column, a la Suzy Knickerbocker, is intriguing, I must admit,
and I discard it reluctantly for
two reasons. One, gossip is
mean and petty and usually untrue, tho' plentiful; and two, the
paper wouldn't print it anyway.
Salty little snippets of advice
in the style of Dear Abbey might
be a way to fill up space. Heaven
knows I'm prepared to advise on
any and all subjects. But I'm
never asked for advice. So
that's out.
However, I think I have a good
idea. Many subscribers to the
Nugget are ex-residents of the
North San Juan Ridge, some
who were born and raised hese,
who have in their memories
fascinating stories of the way
it used to be. Maybe they'd like
to share these with old friends
and neighbors who stilllive here
through this column, I would be
more than pleased to hear from
anyone who would like to have
his or her letters printed here.
As a starter, does anybody know
the origin of the bell in the
Cherokee School? So far I
haven't been able to unearth
anything.
Today, since the sun is shining after several days of cold
rain, I'm going to take a walk
around French Corral where
the old homesites used to be;
to see if the China lilies are
in bloom. It's been so cold this
winter that they're late. If the
sunshine lasts long enough, the ~glmond-trees--will-start-flower-—.—
ing; and then it won't matter
what the weather does, because
to me it will be spring again. I
wish that somehow I could send
a message of appreciation back
across the years to the ones who
provided us with all this beauty.
